Our Healthy Living Segment focused on soy. Soy is a nutrient-dense food which may help prevent diseases and can assist with weight management. There are many wonderful forms of soy. Whole soy foods as opposed to supplements or isolates include:

o   Edamame – (immature, green soy beans)

o   Soynuts           - whole soybeans that have been soaked in water, drained, and baked or roasted to produce a delicious, crunchy snack food

o   Fortified Soymilk - made from pressed, mature soybeans mixed with water and usually some sugar or sweetener. Good substitute for cow’s milk if you are lactose intolerant or allergic, or eat a vegetarian or vegan diet. Most brands are fortified to contain the same amount of calcium and vitamin D as a glass of cow’s milk.

o   Tofu - also referred to as bean curd, is a soy product that is made by coagulating soy milk and pressing the curds into blocks. Tofu comes in different varieties from soft to extra firm,

o   Tempeh - soy product that is made by fermenting soybeans and binding the fermented whole beans together into a cake form. Tempeh has a savory flavor and firm texture

o   Faux meats that list the first ingredient at “tofu” - Tofurky – [organic tofu is first ingredient]
